Rent a car, drive to Sintra and go to Praia da Ursa (but bring trainers for a little hike to get to the concealed beach)
Watch the sunset from either Bar Terraco Limao or Memmo Alfama. Both places have amazing cocktails
Visit as many Miradouros as you can! Our favorites are Santa Luzia and Santa Catarina, but Miradouro de Nossa Senhora do Monte is has amazing views too!
Eat Bacalhau and Pastel de Nata. Doubt you will only have one pastel!
